Tuna

There are several species of tuna including Albacore, Blue fin and Yellow fin. Yellow fin is the most tropical of tuna, abundant in warm waters throughout the Pacific and Atlantic. Market size runs from 7 to 20 pounds. As its name implies, Yellow fin is distinguished by a bright yellow dorsal fin and yellow stripe down its side.
