Ruby Red Ahi Tuna

Ruby Red Yellowfin (Ahi) tuna is further processed with tasteless smoke to “fix” the vivid red color that characterizes tuna at its freshest. The process preserves the natural color of the tuna throughout the freezing and cooking process, giving the finished product a medium-rare, steak-like appearance similar to the filet mignon. This process has made “Ahi” tuna favorite of discerning chefs everywhere.
